Boneless Chicken Thighs in Soy Ginger Sauce


 Price Per Serving: $ 3.75 (for 2, this meal can serve 4 @ $1.87)


This is a great week starter and so I try to serve it on Monday.
The basic ingredients are:
1 package of boneless chicken thighs - (six per package - $3.50)
1 package of either flat rice noodles or regular spaghetti noodles. ($2.89 for rice and $1.20 for spa)
1 small jar or can of mushrooms or fresh. In a hurry, use jarred/canned. ($1.09 + 1 more for fresh)
1/4 cup orange juice
1 large onion



Look in the pantry list on the side bar. You will need to take out:
Soy Sauce
Coconut Oil
Olive Oil
Sea Salt
Garlic
Ginger
Sesame seeds
Black Pepper
Red Pepper flakes
Fresh Dried Herbs - Mint only


Chop your onion and garlic (2 cloves)
Take chicken out of the package and set aside
Have mushrooms open and ready (if using fresh, then wash and slice)
In a covered skillet on a low flame, melt 3 tbs of Coconut Oil and add the same of Olive Oil
Add the onion, garlic and brown.
Add your mushrooms and all 'dry' seasonings (I always use 'taste bud' preferences)
Once this mixture is browned, remove from pan and add another tbs of coconut oil
Place chicken thighs in and turn up the flame to get them nicely browned on both sides.
Now add your soy sauce, again to taste and also add 1/4 cup orange juice.
Cover and let simmer until chicken is cooked. Just before serving, add the onion,garlic and mushroom to chicken, cover and let sit)
In the meantime, cook noodles as you would if making any pasta  (large pot with water and pinch of salt)
I like to use the high heat burner to get that water boiling fast.

When the noodles are done, drain and place on a large low lipped bowl. 
Pour out over the noodles the chicken and all skillet contents
Sprinkle with sesame seeds! You can also garnish with fresh orange slices.


*Teriyaki Sauce ( I prefer the sweeter sauce on the table for individual use)
