One Skillet Chicken Marsala with Linguine!


In the wintertime, we can spend a lot of time cooking at home but what for.. right?

For...Chicken Marsala. This dish can be made fast and frugal in one skillet. Begin with chopped onion sauteed on med. heat in olive oil and butter adding in sliced mushrooms. Once, browned, push the onion and mushroom over to one side and add strips of boneless skinless chicken breasts.


Brown the strips on both sides and then pour in 1/4 cup of either sweet white Marsala wine or use a sweet Riesling. Turn up the heat to reduce alcohol and get all the juices flowing together.  Lastly, add chopped roasted red peppers (as many as you like), along with 3- 4 tbs of heavy cream, and dried herbs: rosemary, mint, and oregano. Some recipes don't use the heavy cream but so little is used that it is hardly noticed and it is a vehicle for the flavors to come together in a rich sauce. In the meantime, prepare the linguine (boil in salted water until tender).
