Chicken Breasts in Creamy Mustard Sauce

Let 2017 be about coming home for dinner...

The best thing about being brainy in the New Year is being frugal about it. That means using what you have to make something great. Who doesn't have Dijon mustard in their fridge or heavy cream or chicken breasts in the freezer?  If you are new to the Brainy Gourmet this year, then get comfortable with the resources readily available on this blog page and the Brainy Gourmet web-page.

For instance, check out the brainy pantry list on the side margin. You will see a simple basic pantry followed by an extended pantry list. As always, it is suggested that you keep or maintain a basic pantry at all times. Why? Because, in this way, you will never be caught off guard as to what to make for dinner. Butter, potatoes and cheese ... is an excellent example of a basic meal from a basic pantry.

Now, for this dish, you will need to have boneless, skinless chicken breasts to be sauteed in olive oil and butter. First, saute on med heat chopped onion and once browned move them over to the side of the skillet and add your chicken breasts. When browned on both sides and the meat is completely white, add 1/3 cup of heavy cream and 1 tbs of Dijon mustard along with fresh dried herbs: rosemary, mint, oregano and sage. Let this simmer for 15 min on low heat and prepare whatever sides you like.
