Bacon, Bulgur and Zucchini ...

Oh summertime...

This tasty summer dish is easy to make and a great accompaniment to fish or chicken or with a salad; even on top. For this dish you will need: buckwheat groats (Bulgur) lean bacon, onion, garlic gloves, silvered almonds, dried cranberries, and garden fresh young zucchini.

To begin, boil the groats as you would when cooking brown rice. Once tender drain and mix with pan fried bacon bits (chopped onion and garlic can be cooked right in with the bacon). Leave a little of the fat in the skillet to quick stir fry sliced zucchini.

Mix the zucchini into the groats as well when just browned.  And, lastly, mix in the silvered almonds and dried cranberries and serve!
