A Simple and Elegant Family Dinner...

What is a simple and elegant family dinner? Its frugal, its satisfying and its complimentary. Its sad to see so many people convinced that a salad is all you need to have for dinner. What happens in between salad dinners is snacking on corporate junk food touted as nutritional and fun for you. That's how their food is sold to you these days. Sorry, but a satisfying dinner is: meat/fish, potato/pasta/rice and a green or yellow vegetable.

The Brainy Gourmet has been saying for years that cooking at home is good for: mentally and physically and its been clinically proven. Cooking a balanced dinner at home is also fun and it brings the family together. Any family dinner should be and can be simple and elegant and inexpensive.

For this simple and elegant family dinner, you will need to buy: one pork cutlet per person, organic wild rice and fresh green zucchini. Start 1 cup of water and 1 cup of soup stock to boil for the wild rice, once rolling add 1 cup of rice. Cook until tender.

Next, saute diced garlic cloves in olive oil, add the pork cutlets and brown. Add roasted red pepper (peppers from jar are ok to use), 1/4 cup of heavy cream and grated Gouda (cheese). Toss in dried herbs and let simmer while you stir fry sliced zucchini in a pat of butter and drizzle of olive oil. When rice is done, prepare to serve.
