Risotto is a delicious side dish to chicken, pork or fish. All you have to do is boil your rice in a rich chicken stock. Once is it tender having absorbed most of the stock, drop in 1 tbs of butter and add one small can of diced tomatoes or dice up fresh if you prefer. Next, add to that fresh dried herbs and Parmesan cheese. Let this set awhile either on the stove covered for 6-8 min on warm or put in the oven for the same amount of time on a low temp. ~ Tutti a Tavola!
