Brainy Chicken Scallopini!

Chicken scallopini is the same as veal scallopini... basically!

Instead of using veal, use boneless, skinless chicken thighs. Did you know that the dark meat of the chicken is better for you? Dark meat poultry contains more iron, zinc, riboflavin, thiamine, vitamins B6, and B12 than white meat chicken.  So, on your way home grab a package of dark meat chicken.

To begin, pound down the thighs with a meat tenderizing hammer.  Then, prepare a small bowl of buttermilk to dip the thighs in (you can use milk with a bit of sour cream). Next, pat the thighs with herb infused bread crumbs, sprinkle with garlic powder and saute in a blend of olive oil and butter; browning each thigh on both sides.

Next, add diced roasted red pepper as much as you like and half a jar of capers. Let this simmer on low heat while you prepare an angel hair pasta.
